Kick Ass Habanero Sauces - Portland Oregon

While remodeling our house in the Mt. Tabor neighborhood of Portland Oregon, we came across a dusty wooden box hidden in the attic. We opened it up and found a cache of old photos, letters and a few scraps of paper. The scraps of paper turned out to be recipes. The recipes were in Spanish. Once we translated the recipes, we set out to see what they would make. Mt. Tabor Magma is based of one of those recipes. We've now been making and using this sauce in our restaurants for 8 years. After tons of requests from our loyal customers, we have decided to bottle and sell the sauce.

Mama Tabor is the fictional character, brought to life by Portland artist Brenda Dunn, based on the woman in the photos who we believe may have written the recipes. We have created other sauces based off those little scraps of paper. We learned a lot from making all the food from the recipes we found. The first lesson we learned, use only all natural ingredients, nothing out of a can. The second lesson, go slow, make a mess and have fun cooking. We hope you enjoy the sauces and look for new flavors coming soon.
